I really enjoy the recipes that Audrey at Math by the Mountain shares. I’ve add quite a few of the recipes shes shared to my recipe rotation. Check out her meal prep ideas here. So, I thought I’d share a few of mine because you know, school for me started August 6 (students show up August 15) and I ain’t got time to cook!
I’ve started a B(Basic) A(Alkaline) LI(low-insulin) diet (Bali) this summer. Have to say I’ve never felt better and I’m still eating MOST of what I like with a few ingredient swaps. One thing I’ve gotten WAY better at is prepping once a week – I did this all summer (to develop a habit) because I knew that once school started, I wouldn’t want to spend a lot of time in the kitchen.
I got to try this amazing Spicy Avocado Dressing recently. It IS a little thick so I add a little extra olive oil to make it more like salad dressing. Thick or thin, it is my new favorite dressing (or dip). We’re going to have a pot luck at school the day before students arrive, I’m bringing this!
Budget Savvy Easy Homemade Taco Seasoning has a permanent place on my stove because it gets used SOOooo often.
Garlic Butter Steak Bites from The Kitchn. Okay, this is ONE meal I will spend time making after school. It IS quick and easy as promised in the recipe. Pair it with some roasted smashed new potatoes (I like purple potatoes) — YUM! I don’t mind eating this the next day.
Last one. Creamy Bacon Feta Spinach Chicken From All Day I Dream About Food. I don’t make this on the stove. I put it in the crock pop with some rice. Add the spinach a few minutes before you eat. I take left overs to school for lunch the next day.
